OK, a little more flesh on the bones.
First goal - Facilitate Shelby Check-In using thin clients and touch
screens printing to local label printers and in-room receipt printers.
Second - Consider moving from thick to thin clients for most office
computing tasks.
Who has done this and would entertain a telephone discussion?

There are many angles to implementing TS and a lot of documentation,
both from Microsoft and other vendors. It all depends on what your
business goals are. You might be better off calling someone in the
group to discuss your goals first. That way you can be directed to the
most appropriate approach and documentation.
