Given your stated business goal, and if I were in your shoes, I would
look at the following:
1. With your first goal consider using an older "fat" workstation
setup in kiosk mode. This assumes that the software for Shelby Check-In
is a "fat" application. There are multiple reasons for this
recommendation but the main ones are this:
a. The requirement for a special printer. If you are using TS for
this application you will have to have a network based printer or a
software that will print through the RDP application to a printer that
is not the "normal" type of printer. Either way, it is extra expense
that would not be required if you use an old workstation/laptop that you
already have.
b. The touch screen may or may not work with the TS connection,
though it is likely to work because it should be a different type of
"keyboard" input.
c. You will probably have trouble getting support from Shelby for
a TS implementation of this particular component of their application.
10 years ago I helped put in a TS implementation of Shelby and I'm sure
that since then they have probably improved its TS capability.
2. Using TS to achieve your second goal is exactly why TS was
created in the first place. Most users only use about 5% or less of a
fat clients capabilities. Most of your printers are network based
printers so printing is easy. So regarding your original question, you
will need to consider the following TS components:

There are tons of documentation about TS all over the web. The links
above are just a few.
I'm not sure that many have deployed this particular application but
many of us have deployed all kinds of applications on TS. I'd be glad
to talk about this with you as I'm sure there are many others would do
the same.

OK, a little more flesh on the bones.
First goal - Facilitate Shelby Check-In using thin clients and touch
screens printing to local label printers and in-room receipt printers.
Second - Consider moving from thick to thin clients for most office
computing tasks.
Who has done this and would entertain a telephone discussion?

There are many angles to implementing TS and a lot of documentation,
both from Microsoft and other vendors. It all depends on what your
business goals are. You might be better off calling someone in the
group to discuss your goals first. That way you can be directed to the
most appropriate approach and documentation.
