Hey Bill, to answer your question about how big the recordings are.  I don't have any of my project files (what audacity creates when it records) on hand as I have saved them to either mp3 or wav so I can't tell you how big those are.  I do have a 2.5 hour wav file that is 1.5GB and a 1.5 hour mp3 that is 82.5MB.  These were recorded at Audacity's default settings which I think is 44100Hz?  With just voice you can go lower than that and create slightly smaller file sizes.  I would imagine the project file isn't too much bigger than what the wav file is.  Hope this gives you a good idea of what to do for disk space.
