[itdiscuss] Exchange on ESX

I have run both Exchange 2003 and 2007 on VMware ESX for years. Currently, we are running an Exchange VM supporting 125 mailboxes and about a 30GB mail store. On that ESX host are 10 other servers running concurrently:
* SQL for Shelby, Citrix, others
* Web Server
* Print Server
* File Server
* School Admin Server (k-6)
* Domain Controller
* Microsoft Search Server Express
We have given Exchange 2 virtual cpus, and 2GB of RAM, just like SQL, and no problems. All of our other servers are also dual procs...the host has 2 Quad-Core Opterons at 3GHz, with 16GB RAM.
Like anything, your disk backend probably will affect your access times for mailboxes, especially if you are not running Outlook in cached mode.

I know this has been discussed before but it has been awhile and there is news now that Microsoft is supporting MS Applications on VMWare ESX 3.5U2.

For those of you that are using Exchange 2007 on ESX, are you happy with it? How did you break out your roles? Along with that, how many mailboxes?
I am just getting ready to install ESX at my church, (volunteer IT) but am also contemplating whether to do it at my regular job which is an org of about 600 mailboxes.
