Tony, the answer to your question is, "Yes."
I'm looking for potential legal/liability insights as well as
staff/server issues that you might have dealt with.
The question has popped up on my radar a couple of times, most recently
by our business administrator (my boss) after hearing a presentation at
a conference. My initial concerns and discussions revolved around the
possible HIPAA implications of having staff counselors and facilitating
lay visitation of hospitalized church members.

Are you asking from a legal perspective, or from a "how can I make this
easier on staff" perspective?
Assuming you're in an Exchange environment, by archiving (for instance,
Barracuda Message Arcivher) you could shrink your mailbox store
considerably, get old stuff out of the way, and yet still have EVERY
messages available to your staff). And, of course, you get the legal
stuff with it since everything is saved forever. (or, you get the legal
risk with it...for the same reason)
