We're on Exchange 07 but I think a lot of this is similar.

You rename the user object in AD. You can right click the user object and go to properties (make sure you have the advanced view) and then add her other name as another email address within the AD user object under the email addresses tab.

I have staff member that has recently married and did not keep her maiden name.  How do I modify her email account to accept her new name and also accept mail coming to her old name?
