I don't think Outlook will auto create PSTs in 2GB increments, but the
link will explain how to allow PSTs to reach up to 20GB.

Subject: [itdiscuss] Exchange - Outlook Archiving
My current Exchange 2003 data store is at 65gb and I need to start
"archiving" data. If I archive data that is older than 1 year, for
example, from a mailbox that has as much as 10gb of data, what happens
when the archive pst file would end up being larger than 2gb? Do you
just loose the data or does it automatically create another PST file?
